Gut loving chicken soup

Ingredients:

Broth

chicken (this one is 1,4kg), bay leafs 3-4

Vegetables:

1 medium carrot, 1 medium onion, 3 cloves of garlic, fresh small ginger, 1 small tomato, additional vegetables which give flavour to your soup( I use 1/2 a cup of brussels sprouts, 1/3 cup sliced zucchini, 1/2 white legume beans, 1/2 cup salary, 1/2 cup of broccoli) 

Spices:

turmeric powder, sea salt and ground pepper, ground cumin, dry coriander leaves
olive oil for frying

Additionally: you can eat soup with fresh bread or add mini macaroni for extra taste

Step 1:

Put a little bit of olive oil in your pan and fry minced garlic till fragrant 30 sec. Add chopped onion, carrot (chopped or grated). Cook for 2 min on low heat till everything is soft.

Step 2:

At this stage add vegetables (could be pretty much everything, all fresh or all frozen or 50/50). It is up to you. I have frozen green ones which give flavor to this soup so 1/2 a cup of brussels sprouts, 1/3 cup sliced zucchini, 1/2 white legume beans, 1/2 cup salary, 1/2 cup of broccoli. 

After that we add our big boy full chicken(1.4kg :), 3-4 bay leafs and 1.5l of water. *If your chicken is smaller maybe you need less water. Chicken should be almost covered by water. 

Cook for a minimum of 40 min, on a medium heat. I cooked for 50 minutes. *If less time, leads to chicken not cooking through.

Step 3:

At this stage take chicken from the pot and separate cooked meat from bones. Add meat back to the pot along with 1 chopped tomato (not only it gives additional color but also soft acidity). Also we add turmeric powder 1/4 of a teaspoon, grated fresh ginger 1 tablespoon (alternatively powder can be as well but 1/4 teaspoon), 1/4 of teaspoon ground cumin, 1/4 of teaspoon ground coriander leaves. Obviously good quality sea salt, pepper.

Step 4:

Mix well and enjoy!

Additionally: you can eat it with your favorite fresh bread or add mini macaroni for extra taste.
